~posh jammy biscuits~

This is the posh version of the quick jammy biscuits and these biscuits aren’t so chunky. They take a little longer than the quick ones but are oh so beautiful!

Ingredients for about 35 sandwiches

425g plain flour

75g sugar

1 sachet of vanilla sugar or 1 tsp vanilla essence

325g butter

4 egg yolks

2 tsp lemon zest

jam

How to : Mix flour, sugar, vanilla and butter together in processor until crumbly, then add the yolks to give you a stiff dough – maybe do last bit by hand. Flatten the dough and roll out to about 2cm thick. Chill for about 30 mins. Cut out circles of dough using a 6cm cutter. Next use a 3cm cutter of any shape and cut out holes in half of the circles. Knead the scraps together and repeat cutting out more circles – should get about 35 whole circles and 35 holey ones.

Bake at 180°c for 10 mins until golden, then leave to cool for a few mins. When cool, spread each whole circle with jam, top with the holey circle and dust with icing sugar. Arrange on a plate and admire before eating!
