These are so chocolaty and delicious, their smell alone will give you a chocolate hit!
They are soft and spongy in the middle and ever so slightly crusty on the outside and they look gorgeous.
Ingredients (makes about 25)
175g plain chocolate – broken into small pieces
150g caster sugar
175g plain flour
½ level tsp baking powder
60g icing sugar
How to –
Whisk the eggs and sugar together until pale.
Melt the chocolate in the microwave (about 2 mins).
Melt the butter in the microwave (about 1 minute).
Mix the butter, melted chocolate and egg mixtures together.
Combine the flour and baking powder and then slowly add to the butter/chocolate/egg mixture until everything is well blended. It should be quite runny.
Cover and chill for 1 ½ hours or overnight. – This step isn’t necessary but it makes shaping the biscuits much much easier.
Using a teaspoon take small amounts of the cold mixture – more of a thick paste after chilling – and form small balls. Roll these balls in the icing sugar and place on a baking tray. Flatten slightly with the back of a spoon and bake at 160°C for 12 mins. If you are too impatient to chill the mixture, it’s quite sticky to work with so it’s easier to spoon blobs onto the baking tray and then dust them with icing sugar and flatten before baking. After baking, leave to cool on the tray for 5 mins before moving them to a cooling rack – if you don’t wait, the biscuits are likely to fall apart!
