These are lovely and soft and moist and just right for a quick goodie fix!

Ingredients: for about 12 cup cakes
2 eggs, lightly beaten
85g self-raising flour
zest of 1 orange
1 medium carrot (about 85g), finely grated
How to: Put the paper cases on a baking tray. Whiz the butter, sugar, flour and orange zest together, then stir in the grated carrot and the sultanas. Spoon the mixture into the paper cases and bake for 10-12 mins at 180°C until golden and a skewer poked into one or two of them comes out clean.
They are lovely with a spot of lemon icing (icing sugar mixed with lemon juice until the consistency of pouring cream) or with butter icing if you want to be wicked!
