~cherry bounty~

This coconut, cherry, chocolate tray bake is another speedy goodie! Golden brown on the top and juicy in the middle.

Made without any flour and just 5 store cupboard ingredients – it tastes fantastic.

Very easy and only about 5 mins to make – just weigh and mix – then into the oven for 20 mins  and voilà!

Ingredients : makes about 20 squares (or 40 if you want bite sized pieces)

200g desiccated coconut

50g caster sugar

2 eggs, lightly beaten

160g  white chocolate, chopped

85g glacé cherries, chopped

How to :  In a large bowl, mix the desiccated coconut, sugar, eggs, white chocolate and glacé cherries until combined. Spoon into a grease proof paper lined tin of about 20 cm x 30cm and flatten down evenly with a fork. Bake at 160° for 20 mins until golden brown and set, then cool in the tin before slicing into bars/squares and scoffing!

These keep moist for a few days and are robust enough for picnics and rucksacks!

  2. I’ve also tried with frozen raspberries and dark chocolate which was just as good.

  3. This sweet looks incredible… I’m not a huge fan of coconut but I honestly think I would devour these gems!
