~plum jam and coconut ring cake~

This is another quickly made light fluffy cake!

Really easy – all the ingredients are put together in the processor and whizzed for a few mins before being poured into the tin for baking!

Ingredients : for 1 big ring cake – mould size about 25cm

175g butter

225g soft brown sugar (1 and 1/2 cups)

225g plain flour (2 cups)

1tsp baking powder

4 tbsp milk

4tbsp plum jam

2 eggs

How to : Mix everything together in the processor (or by hand). Spoon into a prepared ring in*. Bake at 180°c for 40 mins until a skewer inserted into the cake comes out clean. Leave 5 mins to cool, then turn out onto a wire rack to cool completely.

Topping : mix 6tbsp of icing sugar with 6tbsp of desiccated coconut and enough lemon juice to combine and spread over the cake top.

*prepare the ring tin by greasing with butter and thoroughly dusting the inside with flour.

It is very light and airy and the lemony topping adds juiciness. Perfect for afternoon tea or anytime you have a cuppa!
