This is a lovely light summer dessert.
Peaches and cream.
Fruity and made in double-quick time!
Preparation time: 15 min
Ingredients: serves 6
1tbsp Grand Marnier/Cointreau/orange juice
juice of half an orange
sugar if necessary
For the vanilla and orange cream
284ml thick cream/ creme fraîche
2 tsp castor sugar
1tbsp orange juice
finely grated orange zest
1tsp vanilla extract
How to : Slice the peaches into a bowl and add the liqueur or orange juice and a sprinkling of sugar if necessary. Stir, then cover and leave until ready to serve. If the peaches are a bit hard or tasteless, simmer the peaches, liqueur and sugar together for a few mins, then leave aside until ready to eat.
To make the vanilla and orange cream put all the ingredients in a bowl and whisk until thick. Chill until ready to eat, then stir gently before serving on top of the peaches.
