Quick and summery!
Ingredients: enough for 4 as a side dish
3/4 cup corn
1/4 cup red or green pepper, chopped
1/4 cup red onion, very thinly sliced
3 – 4 fresh basil leaves, chopped
1/2 cup cherry tomatoes
How to: Toss everything – except the tomatoes – together, refrigerate until ready to eat then gently mix the tomatoes through and serve.
