~oat, coconut, sultana and chocolate biscuits~

These are surprisingly light, airy oaty biscuits which are perfect with a cuppa!

Filled with lots of goodness, it’s difficult to eat just one!

There are quite a lot of ingredients, but I usually have all of them in the cupboard, so these biscuits are pretty quick to put together!

Ingredients : for about 36 biscuits

preparation time : 15 mins

oven time : 15 mins

100g butter

100g soft brown sugar

sachet of vanilla sugar or a few drops of vanilla essence

50g mashed banana

1 egg

zest of 1 orange

100g whole wheat flour

1tbsp baking powder

pinch of salt

100g oats

25g coconut

75g sultanas

50g chocolate chips or walnuts

How to : Put the butter, sugar, banana, eggs, zest and vanilla in the processor and whiz until well mixed, keep whizzing until the butter has completely blended. In a large bowl, mix the flour, salt, baking powder, oats, coconut, sultanas and  chocolate chips walnuts or. Next spoon, bit by bit, the dry ingredients into the processor and whiz gently until everything is well mixed together. Drop heaped teaspoons of the sticky dough onto a lined baking sheet, leaving a 5cm space around each one, and press down lightly. If you want larger biscuits use a tablespoon instead. Bake at 180°C for 15 mins until lightly browned. Cool and eat!
