~tiffin chocolate crunchies~

This delicious speedy no-bake chocolate treat is great when you don’t want to turn the oven on!

Tiffin is a lovely chocolate mouthful and goes well with tea, coffee, cold milk etc.

Ingredients – for about 16 squares of chocolate crunchie

Preparation time (including chilling) 40 mins

200g digestive (or similar biscuits)

100g butter

3 tbsp golden syrup

2 tbsp cocoa powder

50g raisins or sultanas

150 – 200g milk or dark chocolate

How to : Either butter a sandwich tin (18cm x 18cm) or line one with grease proof paper. Put the biscuits in a plastic bag and bash into uneven crumbs with a rolling-pin. I like some of the pieces of biscuit to be quite chunky, so it’s really up to you how long you bash the biscuits for! In a large pan, melt the butter and golden syrup together, remove from the heat, then add the cocoa powder and raisins before stirring in the biscuit pieces. Stir until the biscuits are completely covered, then pour into the tin and press down firmly. Put in the fridge to chill while melting the chocolate. Melt the chocolate in the microwave for 1 – 2 mins, then spread over the biscuit base and put the tiffin back in the fridge for about 25 mins until the chocolate and the base have hardened. Cut into squares and enjoy!

It’s also nice served as dessert with a spoonful of cream, ice-cream or even custard.

Tiffin chocolate crunchies can be kept wrapped in foil for about a week, but they’ve never lasted this long before so I can’t verify this!
