~high fiber fruit medley loaf~

This moist fruity loaf is lovely served on its own or spread with butter.


Packed with bran and fruit – but no butter or oil – it’s great at breakfast or coffee time!


It’s an easy throw-together, no-whisking kind of fruit loaf.


Ingredients: for a 25 x 15 cm loaf

Oven time : 40 mins

200g All Bran cereal

20cl hot milk

75g finely chopped and peeled apple

200g mixed dried fruit

40 g chipped almonds (whole almonds whizzed in processor until they are reduced to small chips)

100g soft brown sugar

3 eggs, lightly beaten

1tsp mixed spice

70g self-raising flour (wholemeal or white)

How to:  Place the bran and hot milk in a large bowl, stir and leave for a few minutes while you weigh out the other ingredients.  Add the apples, dried fruit, almonds, sugar, eggs, spice and flour to the bran mixture and stir everything together until well blended. Spoon the mixture into a grease proof paper lined loaf tin and bake at 190°c for 40 mins or until a skewer comes out clean. Turn onto a wire rack to cool.


It can be kept for up to 3 days in an air-tight container. It is also nice toasted.
