~ chocolate chip and oat slice ~

This is a great quick cereal bar type of biscuit. Full of oats, dried coconut, and fruity bits.


Just stir everything together, bake and enjoy!


Ingredients (makes about 30 squares)

75g (1/2 cup) self-raising flour

75g (1/2 cup) plain flour

90g (1 cup) oats

100g (2/3 cup) chopped apricots

70g (2/3 cup) coconut

100g (1/2 cup) chocolate chips

120g (2/3 cup) brown sugar

125g melted butter, cooled

1 lightly beaten egg

3 tsbp milk

How to:  Put the first 7 ingredients in a large bowl and stir until well mixed. Mix the butter with the egg and milk, then add this mixture to the bowl. Stir until everything is well combined. Spoon the final mixture into a lined tin (about 17 x 27cm) and flatten with a fork. Bake at 180°c for about 25 mins until golden. Leave to cool in the tin then slice into squares or bars. I prefer squares as these hold together better than bars.

The apricots could be replaced with cranberries, sultanas etc.


Great for a picnic or taking on a long walk!

~mousse au chocolat~

This quick mousse is as delicious as the other and just as quick! In this mousse there are simply 2 ingredients – chocolate and eggs.


The quantities of chocolate and eggs can be varied depending on how many you’re making for –

For 5 little dishes use 150g chocolate (dark or milk) with 1 and 1/2 tbsps water and 3 eggs, for 10 little dishes use 300g chocolate with 3 tbsps water and 6 eggs.


How to: Break the chocolate into small pieces, melt it with the water in a clean bowl over a pan of simmering water -make sure the base of the bowl doesn’t touch the water. Leave to cool a little. Separate the eggs and whisk the egg whites in a clean bowl unitl they form stiff peaks. Add the yolks, 1 at a time to the cooled chocolate and beat together until well combined. Finally gently fold in the egg whites and divide among your serving dishes. Chill for about 3 hours before serving.


These little chocolate pots can also be frozen for up to 1 month!

~oat, coconut, sultana and chocolate biscuits~

These are surprisingly light, airy oaty biscuits which are perfect with a cuppa!

Filled with lots of goodness, it’s difficult to eat just one!

There are quite a lot of ingredients, but I usually have all of them in the cupboard, so these biscuits are pretty quick to put together!

~wonder chocolate chip cookies~

Wonderful biscuits, wonder how I lived without these, wondering how they can be really great with so little sugar, flour and butter, wonder if I could make them everyday, wonder if there will be any left for tomorrow ….

Deliciously light chocolate chip cookies with a meringue like crust, perfect with a cuppa!

 What more can I ask for  : low-fat, low(er) calorie and delicious!

~beautiful banana bread~

It’s always good to have an easy fail safe banana cake recipe to use up those bananas at the bottom of the fruit bowl.

We seem to have fruit trends in this house, one week everyone will want bananas -with breakfast, on toast, as a snack, as a milkshake, with custard … then suddenly no-one wants any and there are a few spotty bananas left hanging about in the fruit bowl.

~flaky double chocolate shortbread biscuits~

These yummy biscuits are  made the same way as my cranberry and pistachio shortbread biscuits and are lovely and flaky.

I used both dark and white chocolate chips, but you could use whatever you like and the cocoa gives them a strong chocolaty taste!
