~ chocolate chip and oat slice ~

This is a great quick cereal bar type of biscuit. Full of oats, dried coconut, and fruity bits.


Just stir everything together, bake and enjoy!


Ingredients (makes about 30 squares)

75g (1/2 cup) self-raising flour

75g (1/2 cup) plain flour

90g (1 cup) oats

100g (2/3 cup) chopped apricots

70g (2/3 cup) coconut

100g (1/2 cup) chocolate chips

120g (2/3 cup) brown sugar

125g melted butter, cooled

1 lightly beaten egg

3 tsbp milk

How to:  Put the first 7 ingredients in a large bowl and stir until well mixed. Mix the butter with the egg and milk, then add this mixture to the bowl. Stir until everything is well combined. Spoon the final mixture into a lined tin (about 17 x 27cm) and flatten with a fork. Bake at 180°c for about 25 mins until golden. Leave to cool in the tin then slice into squares or bars. I prefer squares as these hold together better than bars.

The apricots could be replaced with cranberries, sultanas etc.


Great for a picnic or taking on a long walk!

~oat, coconut, sultana and chocolate biscuits~

These are surprisingly light, airy oaty biscuits which are perfect with a cuppa!

Filled with lots of goodness, it’s difficult to eat just one!

There are quite a lot of ingredients, but I usually have all of them in the cupboard, so these biscuits are pretty quick to put together!

~chocolate flapjacks and not a pancake in sight~

Oaty Flapjacks (plain or chocolate) are deliciously comforting and homely and all those oats must be good for you! They are perhaps not as trendy as beautifully iced cupcakes, but there is something wonderfully moreish about them.

These are prepared in next to no time – a bit of melting and stirring then baking and voilà a tray of goodness!

I have just offered some of these to an American friend saying “fancy a flapjack? and to my surprise she was expecting a pancake!

~bannocking good scottish oatcakes~

Sometimes I have an urge for an oatcake, a scottish oatcake – also called a bannock – all crumbly and delicious topped with cheddar cheese and chutney!

It’s just about impossible to buy oatcakes in Alsace so I make my own. This recipe is quick and easy and makes fantastic scottish oatcakes!

~individual apricot crumble filo tarts with ginger syrup sauce~

Sunday’s the main day for desserts in our house and last week I made these  individual tarts.

They turned out beautifully and were served with ginger sauce and a ball of vanilla ice-cream – no wonder they were finished off in a flash!
